Spinach Salad

spinach saladA fresh spinach salad is a wonderful healthy lunch, full of protein and immune boosters, it is the perfect accompaniment to grilled chicken or fish and can hold its own with a hearty steak. With the pre-washed packaged greens, it is also now also super simple to make.

Salad:

1 bag of baby spinach
1 pkg of pre-sliced button mushrooms
2 hard boiled eggs, peeled and sliced
1/2 small red onion chopped thin
4 slices of cooked bacon chopped (for simpler prep, use pre-cooked bacon)

Dressing:
3 tbsp good olive oil
2 tbsp red wine vinegar
1 tsp dijon mustard
salt and pepper to taste

Whisk together the dressing ingredients. Wash what needs to be wash, peel what needs to be peeled and  put the salad ingredients in a bowl. Toss together with the dressing. Serve and enjoy.
