Mushroom Truffle Ravioli w/ Brown Butter Sauce

Want this to be even easier? Just cook ravioli, top with butter and skip the sauce.

Ingredients:
(for a family of 6)
3 packages of Mushroom Truffle Ravioli (Trader Joe’s makes a great one)
1 pkg sliced white button mushrooms
1 pkg sliced baby bella mushrooms
3 medium tomatoes chopped*
3/4 stick butter
2 garlic cloves minced (or 2 cubes Dorot)
Shaved parmesan.

Boil water in a large pot. Salt to taste.
Wash mushrooms well.
Add butter in one tablespoon pieces to sauce pan. Heat on low medium until butter is melted and foaming. Add garlic and cook for about 1 minute. Add mushrooms. Cook for about 4 minutes. Salt and pepper to taste.
Add ravioli to boiling water. Cook according to package directions, about 3 minutes.
Right before serving, add chopped tomatoes to sauce, stir for about 1 minute and spoon over ravioli.
Top with shaved parmesan.

*You can do this without the tomatoes but I enjoy the freshness and the added nutrients they provide.
