Good-Morning Acai Bowl

My daughter suggested I post an acai bowl recipe after reading how surfers swear by this bowl of super foods… acai berries are filled with antioxidants, amino acids, and essential fatty acids. Add granola and fresh fruit, maybe a little yogurt and you’ve got one power-packed breakfast/ midday pick-me-up meal. Now if only my daughter would eat it!

Size: makes 1 1/2 cups

Ingredients:
7 oz frozen acai**
1 cup frozen fruit (strawberries, raspberries, blueberries, pineapple, mango...)
1 banana
1/2 cup freshly squeezed orange juice, apple juice
1/4 cup granola (I like flaxseed granola or hemp granola)
1/4 cup fresh berries (strawberries, blueberries...)
1/4 cup sliced banana
Goji berries (optional)
Shredded coconut (optional)
Cacao nibs (optional)

Directions:

Break the frozen acai up into large chunks while still in the packaging. Remove from the packaging, and place frozen acai chunks, frozen fruit and banana in a food processor. Alternatively, use a blender with a little juice to blend. Transfer blended mixture to a bowl or bowls and sprinkle with granola and fresh fruit. Garnish with Goji berries, shredded coconut and cacao nibs if using.

I have also had this on top of nonfat vanilla Greek yogurt and it is delish!

** You can find acai in the freezer section of Whole Foods, and many grocery stores.
