Breaded Cauliflower

It is the perfect accompaniment to Thanksgiving dinner. It makes a mess, so make it the night before and heat up at 350 for about 15 minutes.

Size: 8 people as a side

One head of cauliflower
1 cup of seasoned breadcrumbs
2 large eggs
Olive oil - about 3 tablespoons for frying


Boil or steam cauliflower until it is slightly soft but not mushy.
Beat eggs in shallow bowl.
Break cauliflower into pieces.
Roll in egg then breadcrumbs.
In the meantime, heat oil over medium heat in skillet.
Put cauliflower pieces in hot oil and flip occasionally until lightly browned on all sides.

Serve immediately or heat the next day.
