While I tended to indulge in tasting Italy’s fine wine selections, the Bellini was certainly consumed by many touring visitors.  Typically, the Bellini is made using peach puree/juice and Prosecco, sparkling wine or Champagne.  Recently, Martha Stewart published an article “Beyond the Bellini,” offering suggestions on how to jazz-up the basic Bellini.
