Gluten Free Blueberry Pancakes

I love this recipe. It is easy to make, healthy and even the kids eat it.

Size: Made about 7

Ingredients:
1/2 cup ricotta or greek yogurt
1/2 cup almond or grass fed organic milk
2 large eggs
1/4 cup raw unfiltered honey
1/4 cup fresh lemon juice
1 tsp vanilla extract
1 tablespoon lemon zest
1/2 tsp sea salt
2 tsp baking powder
1 cup gluten free flour-Bob's Red Mill cup for cup
blueberries-you can use chocolate chips for kids

Directions:

Mix all ingredients together except for blueberries. Add them once you pour the pancake. Cover up blueberry with batter. I use a knife to do this.
