Autumn Arugula Salad

This year, I’ll take a picture of the whole salad!

I love this salad as a first course in the fall, and it is my go to on Thanksgiving. Every year, I ask my family if they want me to mix it up and make something different, but the answer is always a resounding no. Just make sure you don’t get so full on salad, there is no room for turkey.

Feeds 6 for dinner (add grilled chicken or shrimp if you are missing a protein)
Feeds 12-15 for first course.

Salad ingredients:
3 bags pre-washed baby arugula
one large pack of grape tomatoes (cut in half)
2/3 cup dried cranberries
1 cup dried, chopped figs
1/2 lb crumbled feta or goat cheese
chopped walnuts (candied are less healthy but delicious) or sunflower seeds

Dressing:
1 cup olive oil
1/4 cup apple cider vinegar
1/4 cup natural maple syrup
3 tbsp dijon mustard
salt and pepper to taste
