Warm-Apple Salad

When apples are in season, use them in everything you serve. The options are endless. A simple salad upgraded with warmed apples accompanies all fall meals, thanks to Martha Stewart.

Size: serves 8

Ingredients:
5 tbsp extra-virgin olive oil
2 tbsp cider vinegar
1 tsp grainy mustard
2 Granny Smith apples, cut into 3/4" wedges
8 cups torn red-leaf lettuce
Chives, sliced
Salt & pepper

Directions:

Heat broiler with rack 8″ from heat. In a large bowl, whisk together olive oil, cider vinegar and grainy mustard; season with salt and pepper. Add apples and toss to coat.

Transfer to baking sheet and broil until browned at edges and softened, 5 to 8 minutes. Toss lettuce with apples and any juices. Sprinkle with sliced chives.
