More of a dessert than a happy hour treat. Creamy vanilla ice cream, bourbon, chocolate chips and pecans… Live a little. You can work it off at the gym in the morning. Life’s too short!
12 large scoops (1/2 gallon) vanilla ice cream
4 oz (1/2 cup) good bourbon
2 tbsp heavy cream, plus 1/4 cup, whipped for topping
1 cup pecan halves, plus more chopped for garnish
1/2 cup semisweet chocolate chips, plus more for garnish
Puree ice cream, bourbon, heavy cream, pecans, and chocolate chips in a blender. Divide among four 16 oz glasses.
Top with whipped cream. Garnish with pecans and chocolate chips.
