Flourless, Gluten-Free Guiltless Chocolate Zucchini Muffins

I came across this flourless, chocolate gluten-free muffin recipe recently that I must have printed out some time ago and completely forgotten about.  I’m trying to start the year off on the right foot by making certain modifications to my diet,so  I thought I would give it a try. The simple fact that the recipe contains no flour is what originally drew me to it.  That, and my love of zucchini, which I enjoy in every way, including baking.

I was skeptical as to how these would taste without flour, but they were very tasty, incredibly moist, and simple to make.

The attached recipe bakes 9 muffins, so you must double if you need more than a dozen.  I baked mine with dark chocolate chips and freshly ground almond butter (from Whole Foods), and both worked well.  But you can substitute as needed, based on preference or dietary restrictions.

Be sure to prepare your muffin tin adequately as they may stick.  When finished and cooled make sure to run a knife around the edges in an effort to prevent them from sticking before removing them.

I love muffins and feel I can enjoy this without the guilt.  I actually baked another batch over the weekend and froze some!  They are the perfect accompaniment with a hot cup of tea this time of year.
