The poor little egg. It has gotten such a bad rap over the years. There were years when healthy eaters shunned the idea of the incredible edible … but that was when we were confused about cholesterol. Yes, eggs have a lot of cholesterol, but we have learned that this type of cholesterol is much less damaging than foods high in saturated fats.
