Leon Just Keeps Getting Better

I remember the first time I went to Leon’s Mexican Cuisine. I liked. The second time, I loved it. They have definitely gotten their act together and now they are a tight-run ship thanks to manager Jamie Macias. I came in for lunch this week–a much better option than dinner for me so that I have several hours before bedtime for my overconsumption to digest. On their menu that day was a special that I am still dreaming about and determined to learn to make: Queso de Fundido. OMG. A cast-iron skillet arrives to your table hot and bubbling filled with a blend of melted, creamy manchego cheese over grilled onion and topped with chorizo. I alway am a fan of their table side guacamole–it’s fresh, delicious and I love watching them make it. And I always order their zesty spice-rubbed ribs which are so tender that the meat falls off the bone.I wish I didn’t known this but they now deliver.
