Dreamy Creamy Tomato Soup

Need something in a snap?  Try this quick and easy tomato soup.  Serve along with a crisp green salad and slices of warm and crusty artisan bread.

Size: makes about 5 cups

Ingredients:
2 tbsp unsalted butter
1/2 cup chopped onions
1 (28 oz) can diced tomatoes
1 cup chicken stock
1 cup heavy cream
salt and pepper
Sour cream & fresh basil leaves, for garnish

Directions:

Melt butter in a 3 qt. heavy-bottomed saucepan.  Add onions and saute for 2 minutes.  Add tomatoes, chicken stock, and cream to onions.  Bring to a boil, rediuce heat, and simmer 5 minutes.

Pour into a blender or food processor.  Blend until smooth.  Season with salt and pepper.  Pour into soup bowls, garnish with sour cream, and serve.
