Bacony Roasted Chickpeas

Bacony Roasted ChickpeasNuts are a wonderful source of protein and antioxidants, but why not switch it up with the equally enriched chickpea?  When roasted, they provide even more crunch than a nutty snack. Add bacon and Old Bay seasoning?  Well, now we are talking serious satisfaction.

Size: makes about 2 cups

Ingredients:
Two 15 oz cans chickpeas/garbanzo beans (or jarred)
3 coarsely chopped bacon slices
2 bay leaves
Kosher salt and freshly ground pepper
Spoonful of Old Bay seasoning (to your liking)

Directions:

Preheat oven to 375F.

Rinse and pat chickpeas very dry. Toss with chopped bacon and bay leaves on a rimmed baking sheet; season with salt and pepper.

Roast chickpea combo, stirring occasionally, until chickpeas are crunchy, 60-70 minutes.

Toss with Old Bay and serve. Good both warm or room temp. (I found they last fine for up to a week when stored properly in airtight container or bag)
