Sweet Sweet Potatoes

I love sweet potatoes, and cook with them a lot. They are healthy, and they are wonderful when oven roasted and mixed with quinoa, are a perfect simple side dish after a quick cook in the microwave and are delicious mashed with a little salt and butter, skin on. But, there is no sweet potato as sweet as my grandmother’s Thanksgiving Sweet Potatoes! They are NOT good for you, but what is on Thanksgiving? They are definitely a crowd pleaser, and they are naturally Gluten Free.

Ingredients:

5 lb sweet potatoes, boiled, then peeled and sliced into 1/2 inch thick slices
1 stick of butter
2/3 cup maple syrup
1/2 cup brown sugar

Mix everything but the potatoes in a sauce pan and heat until blended – about 4 minutes.

Place sliced potatoes in a baking tin (if you use the stereo sized kind, use two and split in half)
Pour butter, syrup, sugar over and cover with foil.
Heat in the oven for 15 min.
You can do everything the night before, and pop them right from fridge to oven for about 25 minutes until hot and slightly bubbling.
