Parmesan Crusted Chicken

Quick, easy family favorite:
(for family of 6)

Ingredients:
3lbs thin sliced chicken cutlet
1 cup mayonnaise
2/3 cup grated parmesan cheese
1 cup seasoned bread crumbs
1 tbsp olive oil

Preheat oven to 400.
Drizzle olive oil on cookie sheet, then lay chicken on top.
Mix mayo and parmesan cheese together in a bowl.
Evenly distribute over chicken cutlets. I put about a teaspoon on each and when I’m sure I have enough, smear over the cutlet.
Sprinkle bread crumbs on top until mayo is covered.
Bake for 15 minutes or until chicken is cooked through.

To serve with curried cauliflower:
1 large bag of cauliflower florets (or 1 head chopped by hand)
1 tbsp curry powder
2 tbsp olive oil
salt and pepper to taste

Toss all ingredients and spread evenly on a cookie sheet.
Roast for 15 – 20 min while chicken is cooking.

To serve with string beans:
Steam one large bag of string beans while chicken cooking.
Serve plain or with butter.
For added flavor, heat 2 tbsp butter (or 2 tbsp olive oil) in a pan with bread crumbs and almond slivers. Add to string beans and toss.
