Mixed Green Salad w/Country Dressing

A simple salad with crisp romaine, peppery arugula, and green leaf lettuces go well with the slightly sweetened Country Dressing.

Size: serves 4

Ingredients:
COUNTRY DRESSING:
1-2 cloves garlic, thinly sliced
1 tbsp honey
Salt
1 tbsp red wine vinegar
1/4 cup extra-virgin olive oil
SALAD:
1 large handful of green leaf lettuce leaves, about 3 oz, torn if large
1 large handful of romaine lettuce leaves, about 3 oz, torn if large
1 small bunch arugula, stemmed
1 cucumber, peeled and thinly sliced
1 green bell pepper, seeded, de-ribbed and finely chopped

Directions:

Prepare the Country Dressing and set aside to allow the flavors to “marry” about 10 minutes (or longer).

Arrange the lettuces and arugula in a salad bowl.  Add the cucumber and bell pepper. Pour the dressing over the salad, toss and serve.
