Fresh Pineapple Colada

Fresh pineapple is what makes this pina colada the ultimate frozen cocktail.  Close your eyes, take a sip, and picture yourself lounging on a beautiful Puerto Rican beach.

Size: makes 2

Ingredients:
1/2 cup chopped fresh pineapple
3 oz (6 tbsp) sliver or white rum
1 1/2 oz (3 tbsp) fresh lime juice
3 oz (6 tbsp) cream of coconut
2 oz (1/4 cup) pineapple juice
3 cups ice
1/2 oz (1 tbsp) black strap rum (optional... a must)
Finely grated/shredded toasted coconut for glass rims
Fresh pineapple spears, mint leaves for garnish

Directions:

Combine first 6 ingredients in a blender.  Blend on high until smooth.  Moisten rims of 2 tall glasses with pineapple spear and dip into toasted coconut.  Pour mixture into glasses.  Top each with 1/4 oz (1 1/2 tsp) black strap rum, if desired (I say it’s a must).  Garnish with pineapple and mint.
