Banana Chocolate Muffins

A no processed sugar muffin packed with protein. It is gluten and nut free. If I am making it for my kids I add dark chocolate chips. So you will have a little bit of processed sugar if you do that. If you are used to processed sugar you may not like these. Another healthy recipe from Danette May’s cookbook.

Size: 14 muffins

Ingredients:
4 eggs
2 cups of old fashioned oats blended into powder-I use gluten free
1/3 cup cottage cheese
1 cup unsweetened applesauce
1/2 cup protein powder-I use bio trust
1 tbsp. vanilla extract
1 tbsp. unsweetened cocoa powder
1/2 cup sliced banana
2-3 tablespoons of raw cacao

Directions:

If you have a vitamix, I place all the ingredients listed in the order above, up until the bananas, into the blender. I put the oats first and blend by themselves to get them into a powder form. You can also make this in a mixer but you need to use a food processor to grind up the oats. I actually hand mix in the bananas and chocolate chips/nibs. Pour into lined muffin tins and you can sprinkle with cinnamon or coconut sugar.

Bake for 15-20 minutes at 350 degrees.
