“Thanksgiving” Chicken in Spring

If you’re like me at all… you may love Thanksgiving dinner. Don’t wait an entire year. Whip up this tasty dish. Tender chicken with rolled up with stuffing offers a compact little tasty morsel of the meal we all love.

Size: serves 6

Ingredients:
6 chicken fillets (3 whole breasts, cut in half & boned)
Packaged stuffing mix, slightly crushed
1/2 pt sour cream
2 tsp lemon juice
2 tsp Worcestershire sauce
1 tsp celery salt
1 tsp paprika
1/2 tsp garlic salt
1/2 tsp salt
1/8 tsp pepper
1/2 cup butter, melted

Directions:

Preheat oven to 350F.

Combine all ingredients except chicken, stuffing mix and butter. Dip fillets into this mixture and then into stuffing. Roll each fillet into a ball and secure with a turkey pin (if necessary).

Place in ovenproof baking dish sprayed with vegetable oil spray. Refrigerate for 1 to 5 hours.

Pour melted butter over chicken and bake, uncovered for 1 hour. Do not turn.
