Healthy and Easy Chicken Pasta Dish

Here an easy recipe to whip together for dinner. I used Banza chick pea pasta-I bought at Whole Foods on sale. but you can also use any gluten free pasta or quinoa. This recipe is for 2 servings. So increase measurements depending on how many you are feeding.

Size: 2

Ingredients:
1 cup gluten free pasta or cooked quinoa
6 oz. cooked cubed or sliced chicken
4 tbsp. freshly squeezed lemon juice
1 tbsp. extra virgin olive oil
1 cup chopped basil
1 cup of organic mushrooms

Directions:

Sauté mushrooms, extra-virgin olive oil, and chicken together until mushrooms are lightly brown. Approx. 3-5 minutes. Place on top of cooked pasta and top with fresh basil and lemon juice.

Enjoy!

P.S. remember this recipe is for two so you need to double it for four people and yes this is the amount of food you should be eating. You may want to make more if your partner is a big eater.
