Irish Soda Bread-Gluten Free

This is a healthy Irish soda bread. I made this last night a added a few things. If you love sugar, this may not be sweet enough for you. My family doesn’t eat processed sugar and we all loved it.

Size: 8 slices

Ingredients:
2 3/4 cups blanched almond flour
1/4 tsp sea salt
1 1/2 tsp baking soda
1/2 cup all natural currants
2 large eggs
2 tablespoons honey
2 tablespoons apple cider vinegar
2 tsps caraway seeds
2 tablespoons ground flax meal

Directions:
  1. In a large bowl combine almond flour, salt, baking soda, caraway seeds, flax meal and raisins
  2. In a small bowl combine eggs, honey, and apple cider vinegar
  3. Mix wet ingredients into dry
  4. Place dough on a parchment paper lined baking sheet or a silpat
  5. Form into a large, flat circle 8-inches across and 1½-inches tall
  6. Bake at 350 for 20 minutes then turn off oven and leave bread in oven for an additional 10 minutes
