Montana Monster Cookies

This is a recipe I adapted from my brother-in-law who grew up in Montana. It is like eating a granola bar as a snack. It is also gluten free.

Size: 3 dozen

Ingredients:
3 eggs
1 1/4 light brown sugar
1 stick softened butter
12 oz. creamy peanut butter( I buy the natural Skippy's)
1/2 tsp salt
1/2 tsp vanilla
1/2 cup semi sweet choc. chips
1/2 cup mini m&m's
1/4 cup golden raisins
2 tsp baking soda
4 1/2 cups quick cooking oats

Directions:

Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper or nonstick baking mats.

In a very large mixing bowl, combine the eggs and sugar. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the chocolate candies, chocolate chips, raisins, if using, baking soda, and oatmeal. Drop by tablespoons 2 inches apart onto the prepared cookie sheets.

Bake for 8 to 10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags.
